So I decided to pamper myself with cake, my favorite cake of all time, no less. A rather rare indulgence since I’m not much of a dessert person, be it of cakes, pastries or ice cream. Yup, that’s me! I guess I’m just a boring person by today’s standards.
If someone were to say the word ‘cake’, this is the cake I will think of. A simple butter cake with an icing design that went out of fashion long ago. Even the way it’s sliced into the most basic of rectangles is so old school versus the elegant wedge cut we get these days. But this is the cake I love like no other.
This is not your thousand layer cake that’s made with ingredients from another planet by some high flying chef wearing a pointy hat and waving a magic spatula in some kitchen deep in the belly of an ancient castle under the glaciers of the Antarctica.
The bakery that sells this is located across the street from my regular gas station. Once in a blue moon, I would drive across after pumping gas, double park and hop down to buy one slice. Just one slice, that’s good enough for me. This time, on someone’s encouragement, I went for three whole slices (wow!) which I ate over a period of one week 😛 .
What makes this so amazing is that almost all of the sweetness of the cake, with the lightest touch of saltiness, comes from the icing. The cake itself has a bite to it, unlike those with a wimpy melt-in-the-mouth feel, and it’s that firmness that makes it so good.
I love love love this cake! I love it so much I don’t even care about the food coloring. In fact, I’ve loved it since I was a kid. I feel a certain nostalgia when that icing somehow always gets smeared on my fingers and nose on its way into my mouth. Yup, I loved it then and I love it now. Just gimme one slice and I’ll be happy for the rest of the year.
