Roast chicken croissant sandwich

Hey everyone, seems like it’s been a while since I shared my meal ideas with you. I’m always on the lookout for easy, healthy meals that require little prep time, and you probably are too. So let me suggest this delicious chicken croissant sandwich that I made for dinner two nights in a row.

On our recent grocery run, I bought two rotisserie chickens and a dozen croissants. These croissants are the size of trucks which makes them perfect for filling with leftover rotisserie chicken and lettuce.

Here’s what you need:

  • 5 large croissants
  • 3 big leaves of lettuce, halved
  • Half a rotisserie chicken, coarsely shredded
  • 5 white button mushrooms, sliced
  • Half cup white onion, diced
  • Half a carrot, diced
  • Drizzle of avocado oil
  • Splash of chicken stock
  • Dried basil and parsley
  • Salt and black pepper, to taste

Heat a drizzle of avocado oil in a skillet on medium-high. Add onions and saute till translucent. Add mushrooms and carrots with herbs and a pinch of salt. Once the mushrooms are cooked down, add shredded chicken followed by a splash of chicken stock. Saute till everything is warmed through. You’re ready to assemble.
