Oh my goodness loaded omelet

How I ended up with 60 eggs in my fridge is beyond me. That’s what happens when you go to Costco and you’re all wide-eyed and distracted and your kids are asking you – for the third time. Should we get eggs, Mom? and you nod. But it says here it’s a stack of 5 dozen!!? And you nod again without actually listening.

So believe me when I say we’re on an egg OD. It’s eggs for breakfast, lunch and dinner. I’ve lost track. I just know that from a family that doesn’t do a whole lot of eggs, each time I blink, there are eggs on the table.


This is about the easiest thing to make at home. If you’re less inclined, you could, of course, head to one of those trendy breakfast places and shell out a truckload of cash to have someone whip this up and serve it to you. But this is so easy to make why would you want to do that, right?

Okay, so you’ll need:

  • 5 eggs
  • 1-2 cups spinach
  • 10 grape tomatoes, halved
  • 3 big white button mushrooms, sliced
  • cooking oil of your choice (I used avocado oil)

Lightly beat eggs in a bowl. Saute mushrooms in a tablespoon of avocado oil in a non-stick skillet on medium heat till cooked down. Then add spinach and cook till it wilts down before adding the tomatoes. Stir everything together for just a minute or two. Pour in eggs and flip to cook through.

And that’s it, my friends. How quick and easy was that? I don’t even have to put up a photo of the finished product, you know what a loaded omelet looks like, bursting with all that color and goodness. And best of all, you didn’t hear your wallet screaming daylight robbery, did you?

By the way, we finished up the 60 eggs in slightly over a week and a half, and went out to get another 60 more! Help, I’m seeing stars eggs!

    Too funny about the 60 eggs! But I can completely see how it happens – I usually just throw stuff into the cart with my son because he’s always asking for something. Sometimes I completely forget to take it though! LOL
