Loaded turkey bacon sandwich

Okay, so spinach was on sale at Costco, the grocery place where I unashamedly run berserk. At only $1.79 for a huge, big bag of fresh, cleaned spinach, how could I resist grabbing a couple? Yay me, the chronic bulk shopper. Looks like we’re ready to take on Popeye any time now *checking my biceps now*.

So what’s for lunch? you ask. A turkey bacon sandwich that’s loaded with the goodness of spinach, button mushrooms and tomatoes and an egg, for good measure.

Here’s what you need for this lovely sandwich:

  • slices of bread, your choice (I used 12 grain bread)
  • turkey bacon
  • 1-2 cups spinach
  • 4 button mushrooms, sliced
  • a handful of tomatoes (I used grape tomatoes)
  • 3 eggs, hard-boiled

I shallow-fry the button mushrooms till they’re cooked down before adding the spinach. Once the spinach wilts down, in go the grape tomatoes to fry for just a few minutes. The spinach and mushrooms release quite a bit of liquid which I simply discard. No salt or pepper was used in this recipe (typical of me!) but feel free to season to your taste.

I prefer turkey bacon because it’s leaner than regular bacon and to give this sandwich a twist, I made hard-boiled eggs.

The assembly is as easy as slicing the egg and piling everything on the 12-grain bread slices. The whole process barely takes 20 minutes (including prep) and it’s so healthy too, right?
