Cajun-style Spinach Fettucine with Chicken and Shrimp

This is what we had for lunch today. I whipped this up right before dashing out the door to pick up Hip2bDaughter2 from school, and finished up the last bit when I got home so we would have a piping hot meal.

This is a recipe I created on the fly one day when I figured, heck, we need a bit of variety. I don’t know if there’s even such a thing as Cajun-style pasta but who cares? We gotta eat and pasta is a weekly thing for us. In fact, I try to cook it many different ways so my babies don’t get bored but will instead have something exciting to look forward when they get home from school.

So here’s how it goes:

  • fettucine, enough for 3
  • a fistful of shrimps (which was all I had in the freezer)
  • chicken breast, cut into thin strips
  • a fistful of arugula
  • tomato, diced
  • onion, diced
  • a couple cloves of garlic, chopped
  • Cajun seasoning, salt and pepper
  • olive oil

I’m using some beautiful spinach fettucine here which my girls used to hate but love now. It’s a healthier option and has a bit more flavor. You can use plain fettucine and it works just as well.

I heat up my saute pan on high, drizzle in a good amount of olive oil and throw in my garlic and chicken. Saute for 1-2 minutes before adding a tablespoon of Cajun seasoning. Lower the heat to medium and add onions, shrimp and tomatoes. Saute till chicken and shrimp are cooked through.

Meantime, my fettucine is boiling merrily away in another pot. When done, drain, add to the saute pan and toss with the other ingredients. At this point, feel free to adjust the seasonings to taste. At the last minute, throw in the arugula which takes exactly no time to cook.

And lunch is ready. So so good. This fettucine rocks! You can barely see the tomatoes and arugula but trust me, they’re all hiding at the bottom of the bowl 😆 . The girls are always hungry when they get home and I’m always in such a hurry to dish out lunch that I don’t always set up my food for aesthetics and picture-taking, as I probably should 😳 .

The girls love this so much they threaten to lick the bowl clean every time. But I always cook a little extra in case someone’s extra hungry or someone needs to gobble a few bites before they leave for extracurricular activities in the mid-afternoon.
