Excuse to pig out

I confess, we’ve been eating out too much this past week. My only excuse is that we’re having a staycation (Raine is in summer school) which means, no exciting new sights and sounds. So we decided to appease our sense of taste instead. Okay, so that’s a pretty lame excuse.

Okay, let me try this. The weather’s been crazy hot and humid these days. Quite frankly, I’d rather be freezing on the Swiss Alps. Since that’s so not gonna happen, the next best thing is to seek out the coolness of a restaurant with an icy drink and hopefully something nice to eat. Sound like a better excuse? 😆

From our trip to Chili’s, we ended up with some leftover tostada chips which I reheated with salsa and cheese. Yums! What do you do with leftover chips or tortillas?

    I think treating yourself to good food is the right way to handle a Staycation.
    Last summer, I found this recipe for a watermelon bellini. Watermelon is usually too watery for a fruit smoothie. This summer, I found out that if you just add watermelon and white wine to a blender or juicer, you don’t even have to sieve it, it is good to go as is. My husband eats watermelon his way, seeing how far he can spit the seeds; I drink it my way:)
