Raine ordered chicken quesadilla at Friday’s recently and since she enjoyed it so much, I thought I’d try to do a homemade version. Well, that’s just me! Whatever my kids love to eat, I will want to try and cook it for them at home.
Tada, this is it! My first attempt at a chicken quesadilla. I didn’t have any tortillas in the fridge but I found some pizza bases which I sliced in half and they worked great. For the filling, I used cubed chicken (lightly sauteed ahead of time), lettuce and cheese, topped off with my super-chunky homemade salsa and here’s a healthy, delicious meal that my girls loved.

Looks like quesadilla is going to be a regular on our rush-rush weekday menu. This is so easy and inexpensive you wonder why restaurants ring up such large numbers on their Point of sale display when you call for the check.
I will be tweaking the recipe, of course, so if any of you seasoned quesadilla chefs have any tips to offer, I’m all ears.

My family loves quesadillas also! Just make sure the pan is hot enough and you don’t overfill them, I learned the hard way that they won’t fully cook if you make that mistake

Looks tasty! The great thing about quesadillas is the variety of things you can make them with! Anything! I know you didn’t use tortillas, but I feel the same about tortilla/burritos. You can wrap up anything in a tortilla and its good.
